The cutting edge is hardened to a very high HRC-55 to ensure a sharp cutting edge that will last.
4Cr13MoV is a stainless steel, used for making quality knives and similar tools where hardness and corrosion resistance is important. The Stainless steel is 4Cr13, plus 0.5% Mo (molybdenum) and 0.3% V (vanadium), to improve resistance to intergranular corrosion.
